The rabbi mentions that just like the keruvim substituted for avoda zora, likewise you have kosher versions of non-kosher foods such as shrimp. I'll add that you have plenty of kosher versions of kosher foods, such as coconut milk and soy milk substituting for dairy milk, and tuna being like "chicken of the sea" and carob powder substituting for cocoa powder.
